Last month we created a wonderful Cookie Buffet for the Volunteer Appreciation Event at Fraserview Care Lodge in Richmond, BC. It was held to thank its many amazing volunteers who devote their time and love to the senior care centre. The centre was awesome and we thank them for all the support, it was such a pleasure teaming with them on this great event. Below is a list of some of the cookies we selected for our display and some great suggestions for your next Cookie Buffet.

- Soft Ginger Snap Cookies {to die for}
- Chocolate Whoppie Pies {can't stop eating these once you start}
- Oatmeal Almond Cranberry Cookies

- Classic Sugar Cookies with hand stamped "Thank You" in lemon Royal Icing
- Chocolate Chip Cookies
- Petite Palmers
- Peanut Butter Cookies
Here is a Christmas Present from me to you: Mini Skor Chip Cookies
These are a family favorite, and they have been so for years...to find out why, whip up a batch. You will replace your shortbread recipe with this classic and never look back.
2 1/4 cups all purpose flour
1/2 tsp salt
1 1/4 cup (300 ml) butter, softened
1 cup icing sugar
2 tsp vanilla
1 1/2 cups (375 ml) Skor toffee bits (or butterscotch chips)
Stir together flour and salt.
Cream butter.
Gradually beat in icing sugar and vanilla.
Add dry ingredients to creamed mixture.
Stir in toffee chips.
Form 1 inch balls (I like to use a melon baller for uniformity), flatten to two inch rounds.
Bake at 325 F for 10 - 11 minutes.
Yield = 6 dozen
