Here is a Christmas Present from me to you: Mini Skor Chip CookiesThese are a family favorite, and they have been so for years...to find out why, whip up a batch. You will replace your shortbread recipe with this classic and never look back.
2 1/4 cups all purpose flour
1/2 tsp salt
1 1/4 cup (300 ml) butter, softened
1 cup icing sugar
2 tsp vanilla
1 1/2 cups (375 ml) Skor toffee bits (or butterscotch chips)
Stir together flour and salt.
Cream butter.
Gradually beat in icing sugar and vanilla.
Add dry ingredients to creamed mixture.
Stir in toffee chips.
Form 1 inch balls (I like to use a melon baller for uniformity), flatten to two inch rounds.
Bake at 325 F for 10 - 11 minutes.
Yield = 6 dozen
